Apple Crisp Recipe: How To Make A Great Apple Dessert

Apple crisp is a term used in the United States as an apple dessert that is made of apples and has a slightly hard and crunchy crust on the top. In the United Kingdom it is called apple crumble and both are made with apples, butter, sugar or brown sugar, flour or oats, cinnamon, ginger and nutmeg. It isn’t a dish that was served to guests or at holidays but an apple crisp recipe makes a nice everyday peasant kind of dish that was served to the family.

There seems to be some sort of confusion with some other kinds of desserts made with apples. There is a dish called apple brown bettie that is made by layers of apples alternating with layers of sugar laiden bread or crackers and slathered with a sauce. Another dish uses drop biscuits on top of the apples and is called by several names including apple cobbler or apple grunt, slump or apple pandowdy.

Fannie Farmer’s Cook book that appeared in’96 was the first to publish the recipe. It was being presented on tables long before that. It is always made during the autumn of the year because that is the time when the apple crop is harvested. You can also make it with canned apples to bring that flavor to the table any time. Several variations may include fruits that are in season at the time you make it such as different berries or peaches.

The types of apples needed to make apple crisp are called cooking apples. They are tart and a little more firm than other apples and will stand up to baking and not get mushy. Varieties that make good cooking apples are Granny Smith, McIntosh, Jonathan, Northern Spye, and Winesap.

To make an easy apple crisp core, peel and slice six large apples and place them in the bottom of a greased nine inch square baking pan. In a bowl combine three fourths cupful of oatmeal, one half cup of packed brown sugar, one half cup all purpose flour, one half teaspoon of cinnamon, and six tablespoons of softened butter. You will need to use a pastry cutter or two knives to cut the butter in like pie crust until it resembles a fine meal. Take the topping and spread over top of the apples and bake in a 350 degree F oven for 30 to 40 minutes or until the top gets brown. Cool for about 10 minutes then cut it into squares and serve it while it is still warm with some vanilla ice cream. If you prefer whipped cream, use that instead.

Another version adds some cheese to the ingredients. A traditional dish is apple pie and a slice of Cheddar cheese and this recipe is based upon that tradition. You will need 6 apples that have been cored, peeled and sliced; one third teaspoon of cinnamon, six teaspoons apple juice, one half stick of butter, three fourths cup sugar, one teaspoon lemon juice, one eight teaspoon salt, one half cup flour, and one fourth pound grated Cheddar cheese. Again the apples should be sliced and placed in a nine inch square baking dish. The cinnamon should be sprinkled over top and then the apple juice and lemon juice added. In a bowl the butter should be at room temperature and be cut into the flour with a pastry cutter or fork. The sugar and salt are added next and then the shredded cheese. The mixture should be crumbly and is placed over the apple mixture. Bake in a preheated 350 degree F oven for about 40 minutes until it is bubbling and crust is crisp. Let this version cool a little but serve warm and you can serve with ice cream.

Sometimes you just don’t have any apples but there is a wealth of zucchini that you have picked from your garden. Zucchini can be used instead of apples to make a crisp that tastes like apple crisp. Take five cups of peeled and seeded zucchini and slice it about the size of an apple slice and you will also need to use a fourth cup of lemon juice, 1 teaspoon of cinnamon, three fourths of a cup of apple cider. Put this all in a saucepan and bring it to the boiling point then lower the temperature and simmer 10 to 15 minutes or until the zucchini becomes tender. Put it in a greased deep dish pie pan. Combine 6 tablespoons butter at room temperature, one fourth of a teaspoon of salt, a teaspoon baking powder, a cup of flour and one half of a cup of brown sugar in a bowl. Use a pastry cutter or fork and cut the mixture so that it looks like fine meal then spoon it over the apple mixture. Bake for 40 to 45 minutes in a preheated 350 degree F oven and serve it warm with ice cream. This tastes just like apple crisp.

Jugs-N-Strokers

A few weeks back I received an email from a girl Kim about a Charity Motorcycle event she was working on for Bide A Wee an Animal shelter I worked at when I was younger. As I read the info I was looking forward to attending the event only to find it was being held at Jugs and Strokers the only “Biker Bar” on Long Island that does not allow Motorcycle Club Colors. I was pissed to find out I would not be welcome at this event. I then saw the email had been sent out to many other Motorcycle Clubs on Long Island. Pissed Off, I started writing a reply to the email and sent it out to the MC’s here on Long Island. Here is what I wrote.

Hey everyone this is LJ James.

You may not know this but I worked at Bide A Wee in Wantagh for many years. I have some great memories of my time working there. As much as I love the place and think Bide A Wee to be a truly great organization, I will not take off my Colors to go inside Jugs & Strokers to attend this event.

I see this email is addressed to many different Clubs. Some of your beliefs may be different then mine and you may take your Colors off to attend this event. I would hope all of you have more respect for your Club then to do that, but these are my beliefs and may not be yours.

I think it is only fair to Kim who is working very hard for this very worthy cause that she know what your feelings are about the Jugs and Strokers policy in regards to Colors. Kim has spent a lot of time working on this event and I would hate to see her event fail because she is unaware of the Revulsion Jugs and Strokers has towards Motorcycle Clubs!!!

Not only is it an old out dated Policy that promotes the Division of Motorcycle Riders, it is also illegal according to NY State Law! I have been working hard to protect and promote Motorcycle Rights and Unity here in NY and world wide. I think it is time We started working hard to change what is wrong here on Long Island! There is an old saying, “if you want to fix the world start in your own back yard”.

This is an event that, when I heard about it I wanted to attend. Then I hear it is being held at Jugs and now I am “not allowed to attend”.

I am not a bad guy! You all out there know me. How many of your events have I covered in Magazines? How many of you have I DJed for? Not only your Club events but many of your personal family events! I’ve even preformed wedding ceremonies for a few of you and after I married you I Djed your wedding!!!

You too are also all good people. Your MCs have done many things to make Long Island a better place. You have fed the Hungry, Clothed the poor, and made sure every Child on Long Island had a Toy for the Holidays. Our patches stand for what is great about America! Why should we be made to feel that wearing our Colors is even the slightest bit wrong?

If you ask Jugs and Strokers, they might try to use the excuse “well its not your group its other groups who are the bad guys”. That is a cop out, a lie, and an attempt to divide the Long Island Motorcycle Club world!!!

Over the past few years here on Long Island we have seen a Unity in the Motorcycle Club World that many still can not believe. Sport Bike Clubs and Cruiser Clubs riding and hanging together. AMA Clubs and 1% Clubs attend each others events. Law Enforcement Clubs and Outlaw Clubs Breaking Bread and Drinking together at events. I have seen every type of rider hanging out together. This is the Biker dream people!!!

There was a time when we were all told that you could not have a bar on Long Island where all MCs where aloud to mingle together. That there would be nothing but fights and problems. Then JDs Place opened and shortly after that, the Myth was put to rest.

The Motorcycle World here on Long Island has become something We are all very proud of. I call out to all of you MCs, independents, and MROs like ABATE, it is time to end the humiliating practice that Jugs and Strokers has been aloud to inflict upon the Long Island Motorcycle World for far too long!!!

I am tired of this bar being allowed to claim it is a biker bar for bikers, but if your a member of a Motorcycle Club and wear your Colors, you are some how an undesirable, and unwelcome. I say time is up, Jugs and Stokers! You have made enough money off the Long Island Motorcycle world! You need to stop being part of the Problem and become part of the Solution!!!

I’m interested to know what the feelings are of the rest of you!!!

Four Well Known Ways To A Traditional Kitchen

I totally agree – an expensive kitchen is a woman’s dream. It is the best place in the home and is a place where one can create culinary delights. Thanksgiving Dinner – Step By Step Planning

Preparing your Thanksgiving dinner takes a lot of planning. It can be stressful, to say the least! How can you make your dinner successful, especially when you have a large group? By laying out a planning strategy that works, of course. Let’s look at some ideas and tips for planning your holiday meal:

10 Days Before Thanksgiving Day:

Begin planning your guest list at least one week to 10 days before Thanksgiving day. Call anyone on your guest list that you haven’t contacted yet to invite them. You’ll be able to plan for the serving sizes now as well as the place settings. Don’t forget to add any special dishes that anyone will be bringing next to their name on the guest list. Also, make notation of any dietary needs next to any guests name who require certain foods.

Plan the size of your turkey once you have your guest list made. You will want about 1 to 1 1/2 pounds of turkey for each guest. Choose a bit larger turkey if you want a lot of leftovers. Decide now whether you want to buy a fresh turkey or a frozen turkey. You may want to order a deep fried or smoked turkey from a market or club.

Your dinner menu should be finalized during this time. Count up the number of adults and older children on your guest list. Adjust your side dishes to take into account the big eaters. The Week of Thanksgiving:

You may want to bake your rolls and bread now and freeze them ahead of time.

The Days Before Thanksgiving:

Two or three days before Thanksgiving is the time to get some items prepared so they are ready and waiting for you on Thanksgiving day.

Foods that can be prepared in advance are things like cranberry relish. You can also clean and dice the vegetables you need for your stuffing, like onions and celery. If you are preparing a vegetable tray for an appetizer, wash and trim those vegetables as well. Store everything in tightly sealed plastic zip lock bags or containers. Some side dishes may be prepared the night before Thanksgiving. Some folks prepare their stuffing and store it overnight so it is ready to go in the morning. It’s also time to make your pies and cakes. If you have frozen rolls or side dishes that need to thaw, get them out the night before.

Make sure you have everything on your shopping list in your kitchen at least 2-3 days before Thanksgiving morning.

If you have children, involve them in the planning. They can help organize games for the younger guests, assist with decorations, and can even help out in the kitchen if you desire. Bring your special Thanksgiving serving platters down from storage now. If you will need to wash and iron table linens, now is the time.

If you have purchased a frozen turkey, take it out of the freezer and place it in the refrigerator 3 days prior to cooking to give it plenty of time to thaw. Following the thawing instructions on the turkey to the letter.

Thanksgiving Morning:

It’s Thanksgiving morning and you are all set! Your turkey is thawed and ready to stuff. Figure out the timing to roast your turkey using the time table on the packaging. Prepare your bird, stuff it, and get it ready for the oven in your roasting pan. Plan your side dish cooking schedule. Prepare any side dishes and desserts that you were unable to prepare overnight; peeling potatoes, etc. Wash dishes as you go to prevent a pile up during dinner.
