Tortillas got its name from the Spaniards. The word “tortillas” comes from the Spanish word “torta” with the meaning being round cake. Tortilla history tells us that the Aztecs were making flour tortillas over 10,000 years before Christ. They ate a lot of corn, either direct from the cob or used as an ingredient in another recipe. The Aztecs would grind the corn into cornmeal and make corn dough, or masa, out of it. This was done by mixing the cornmeal with water, which had to be exactly the right temperature; else, it would be the wrong consistency to make a dough. When the masa was ready, the Aztecs would shape it into a ball and then flatten it into a type of thick pancake. When it was the right size and thickness, the masa dough would have been placed on a hot griddle and cooked quickly.

Not long ago I spent a month in Sweden. One of the things I learned is that seafood is very much a part of their culture. Well you would think so right, I mean the ocean isn’t THAT far away. However being from the Midwest it was just something I wasn’t used to so it didn’t dawn on me.

While traveling abroad I ran into a wonderful new shrimp dish that was new to me and now that I am back home I have been trying to recreate it and so far the results have been spectacular.

It’s actually quite easy, but I have ‘Americanized’ it a bit. First you make a white cream sauce. Standard you know the one where you melt butter then just add flour to make a rue and add milk and simmer to thicken.

Afterwards you need to throw in a crumbly cheese, with ricotta, bleu cheese and parmesan being examples of what you can use. Branch out and try new cheeses or go with what is familiar to you. While I have only tried using crumbly cheeses, it would likely work with any cheese.

Next you add curry. You season it to taste so maybe you should start with light curry like I do. Just remember that it will get stronger the longer you cook it. Next add the pasta and shrimp that you have already cooked to perfection.

If you don’t live near a coast, it’s best to buy frozen, pre cooked shrimp. Fresh shrimp may be difficult to find, and raw frozen shrimp is not a lot of fun to clean and cook. This shrimp recipe is very versatile. You can turn it into a casserole that will feed your whole family. Or for a more expensive and elegant look, you can keep the pasta seperate and pile shrimp and sauce on top. Add a sprinkling of paprika and fresh cilantro and you’ve easily turned an ordinary meal gourmet!

Prepared sauces are available that will save you time and effort in the kitchen. Some of the ready-made alfredo sauces may come a bit thick or rich, but that is easily remedied by stirring in a small amount of milk. Next comes the cheese, curry, onion, garlic, and any other additions you desire.

This means that all morning long, your body is working to process those nutrients so that you’ll have additional energy from the start all the way to the end of the day.

You need to take a serious look at what you are putting into your body for fuel. Candy and soda may have the sugar in it for a quick jump-start, but it does not have the lasting nutrients that you need for energy. Make sure that you are enjoying a balanced diet that has lots of fruits and vegetables in it. These are lower in calories, but help your stomach to stay full.

You must also hydrate yourself, and that means drinking lots and lots of water. Water is really something that keeps your body in top operating condition. A trick is that if you are drinking any caffeinated free beverage then you can count that as water in your day.

Your next step is to count calories better than old Ebenezer Scrooge counted his pennies. Last but not least is the motivation factor. While eating the right foods at the right times and exercising are all very important things, none of those things are possible without proper motivation and support. Forget trying to do it on your own. If you could have done it, you would have by now. The best thing to do is to find a running buddy. Someone whom you can confide in and someone you can trust that will not let you give up. You two can support one another as you press forward toward creating the body you deserve by inauguration day.

Do you arm yourself with a candy bar when battling your worries? I did, for more years than I’d like to admit. When I turned to food to fix my worries, food fixed me real good! The more I ate, the fatter and more stressed out I got. But for some strange reason, that didn’t stop me from heading for the refrigerator or grabbing a few of my favorite candy bars when I was upset. And I was upset A LOT.

I was the RN supervisor of a large medical-surgical floor in a hospital-telling everybody what to do to get healthy, and I felt like a dummy because I couldn’t stop overeating even though it made my blood pressure soar. My doctor told me I could have a stroke if I didn’t lose weight, so guess what I did: I went home and ate everything I could get my hands on. A doctor I worked with congratulated me for being pregnant–when I wasn’t–and I swore I would eat 500 calories until I wore a size 3, but I’ll bet you can guess what I did instead: I ate until I was about to pop.

I wanted to be thin more than anything in the world, so why couldn’t I quit overeating? I didn’t understand it then, but I do now. When we eat, our bodies secrete feel-good brain chemicals–neurotransmitters, such as serotonin. So eating really does relieve stress temporarily.

The problem is that when we turn to food to fix our problems, they only grow, and so do we!

Twenty-five years ago, after a lifetime of overeating and stressing out, I began discovering practical ways to lose the weight and worries that weighed me down. Here are three things that did, and still do:

I started writing in a Prayer Journal about things that were stressing me out. I learned that resentments are fattening, pouting puts pounds on and worries widen hips so I cast those cares on God, and not on the refrigerator.

I joined a group of people who wanted to lose weight. I love talking to others who think like I do and have the same struggles with food I used to have. We have fun while getting to the roots of our overeating. After awhile, most of them are amazed to find themselves shrinking outside while growing inside.

Has your gift giving budget taken a hit this year due to your dwindling finances? You are not alone. So, what do you do when you want to give someone a gift for their Birthday, or for dog-sitting, or Christmas, or Valentine’s Day, or any number of times when a small gift would be appreciated?

Normally when people are struggling with a tight budget, things that are considered unnecessary are the first things to go. Gifts are often the first things to be cut out of our budget, but we never feel good about that. We want to show our love for the people we care about, and who care about us, by giving gifts. How do we accomplish that with limited funds? By using our creativity and giving gifts that we put our heart into.

My favorite heartfelt gift is food, chocolate in particular. If you have a little bit of time, you can create some pretty fancy chocolate treats with very little money. A little bit of chocolate goes a long way when you use it to create nut clusters or coconut haystacks, or any number of fun, simple treats. Anyone would think you just paid a fortune when you present them with some pretty chocolate delicacies.

Most chocolate treats are relatively easy to make once you get the hang of it. You’ll find out which pans work best, which spoons you like, and how long to melt the chocolate on the first or second try. I especially like this chocolate treat because it’s something that most people would never dream of making for themselves.

Coffee Spoons For The Chocolate Fanatic

If your gift recipient likes a nice, hot cup of coffee, then they’ll like it even better with a little spoon of chocolate. This is a gift that both men and women love.

Start with this list of items:

You’ll need to buy heavy duty plastic spoon, I like the clear ones. If you’ve got a great thrift store or antique store in your community, you might be able to find some unique silver spoons that would definitely add a special touch. Be sure they’re in good condition, then wash and dry them well.

Purchase milk chocolate coating, not Real Chocolate. You’ll find blocks of the coating in the baking aisle at the grocery store. The reason you don’t want to use Real Chocolate is because it tends to be a little more difficult to get just right. You don’t want to bother with it, and the chocolate coating is delicious.

Peppermint oil flavor and other goodies like peppermint candy are good additions to the chocolate spoons and add yet another fancy element to them. You may also wish to sprinkle on some little candies like you would buy for sugar cookie decorations.

You’ll need to cover cookie sheets with parchment paper so the spoons won’t stick while cooling. Don’t use waxed paper as the chocolate will stick and you’ll have a mess. Parchment paper can also help the clean up if you’re working on a larger number of spoons.

Each spoon will be wrapped in a clear cellophane candy bag. You’ll find these in a craft store with all the candy making supplies. Also, at the craft store, be sure to pick up some decorative items to tie the bags shut, like ribbon, gift wrap ribbon, raffia, or jute rope.

This is how you proceed:

Put a big pot of water on the stove and bring it to a boil. Carefully chop up your big chunk of chocolate into little chunks and put in a small pot that will fit in the big pot. When the water in the big pot comes to a boil, shut it off, and very carefully place the small pot in the hot water. Don’t let your water run over into the small pot with the chocolate. After the small pot sits for a few minutes and you see the chocolate start to melt on the edges, take the pot out of the water and begin stirring the chocolate with a big rubber spatula until it’s all melted.

When you are done stirring the chocolate, dip one spoon at a time in the melted chocolate and lay each one on the parchment paper you have on your cookie sheets. If you plan to decorate the spoons with other candy, do it while the spoon is still wet. Otherwise the candy won’t stick. Then move on to the next spoon, dip, decorate, and so on. Once all of your spoons are done, take your cookie sheet to a cold, preferably dry place. A refrigerator or freezer is okay to just get them set up a little, but don’t leave them in that moist environment for more than a few minutes.

Now your chocolate is set and you are ready to wrap your spoons up. Begin by placing each spoon in a candy bag that you purchased. Tie a piece of raffia, or gift wrap ribbon, or other pretty material on each bag around the handle so that the bag is closed securely. You may wish to tie more ribbon or some decorations on the bag, even a peppermint candy cane, or anything that makes your spoon gift more festive.

That’s all there is! You have just created a one-of-a-kind gift for someone special in your life. Doesn’t that feel great? Your gift didn’t cost a lot of your hard earned money… you gave a creative gift that will be greatly appreciated… a gift from your heart.
